Recipe: Lentil, Avocado, & Peach Salad
The only perk of Michael being gone for work trips is that it allows me to experiment with foods I typically wouldn't (oh, and watch Gilmore Girls on repeat). Fortunately, he's not too picky, but I know he wouldn't appreciate this dish as much as I do. I don't know about you, but I am not about to zest a whole lime and have someone not love it. So, I took advantage of cooking for myself and made one of my favorite side dishes to accompany my salmon for dinner last night.
The thing I love most about this dish is the fresh, lime taste that is in every bite -- it just taste like summer. Also, the lentils bring a lot of protein that you could eat this on its own for a meal. It'll store in the fridge for a few days, but I don't believe mine has even made it to see day 2. Lentil, Avocado, & Peach Salad
Serves 4 // Prep: 15 min // Cook: 20 min & cooling time
1 cup of dried lentils
Juice of 2 limes
Zest of 1 lime
2 cloves of garlic, smashed
2 tablespoons olive oil
2 medium peaches, diced
4 scallions, thinly sliced
1 avocado, diced
Cook lentils according to package with the smashed garlic cloves, set aside to cool. Discard the garlic.
Lime Dressing: Whisk together olive oil, salt, pepper, and lime zest & juice.
In a large bowl, combine scallions, peaches, avocado, lentils, and dressing. Toss to combine and serve immediately.
